Olasagasti Anchovy Fillets in olive oil are fresh anchovies from the Cantabrian Sea (Engraulis encrasicholus) fished during its fishing season, the “Campaign of Spring” from March 1st to June 30th, with the traditional Basque Country fishing. In this period the anchovies are in their best features, in an excellent balance between meat and fat. They deserved the Mark of Guarantee, which certifies that the products were processed with Cantabrian anchovies, following the traditional method, in accordance with the little secrets and characteristics that make it so special and appreciated resulting in a high quality product.
